The Perfect super simple sweet potato recipe, to sweeten up your day. This easy to follow guide will guide you all the way.
- 4 Sweet Potatoes.
- 100 ml of milk.
- Olive Oil.
- 4 rashes of Smoked Bacon (Optional).
- Cheddar or your favorite cheese (Grated).
Cooking time: 1 hour 20 minutes.
Preheat the oven to Gas Mark 6, 200C, 400F.
While the oven is heating wash the sweet potatoes, then prick each one all over with a fork, adding around a dozen holes to each.
The sweet potatoes need to be covered in olive oil and salt. You can do this in a few ways but the easiest way I find, is to mix the olive oil and salt in a little bowl. Brush the mixture over each sweet potato.
They can then be placed either directly onto the oven self or onto a baking tray, whichever you prefer.
Leave these to cook for around 50 minutes at Gas Mark 6, 200C, 400F.
Once the sweet potatoes are cooked, let them cool for a minute or two so they can be handled.
Cut each one in half and scoop out the insides, trying to leave 1cm around the skin. Sweet potato skin is very thin and tends to fold up when back in the oven, if you don’t leave the 1cm.
Place the skins onto a baking tray and drizzle with a little more olive oil. They should be in for a further 15 minutes. Again at Gas Mark 6, 200C, 400F.
While they are cooking you can prepare the stuffing. Get the bacon cooking and whilst that’s on, mix the milk with the insides of the sweet potato that you scooped out. This can be done with a fork or if you would like a smoother texture, a potato masher works perfectly.
Take the skins out of the oven and stuff each one with the mixture you just made, leaving the bacon to one side for later.
Put these back in the oven for a further 10 minutes.
Here we go, the final step and we’re ready to eat. Take them out of the oven, cut the bacon up into small pieces and add this on top along with the grated cheese. You can now either return to the oven, until the cheese is melted, or put them under the grill If you prefer to have your bacon and cheese with a more crispy texture.
